Epic Rice Cooker Pancakes

From Japan!



tl;dr:

  • Toss your pancake mix and any other ingredients it calls for into the rice cooker’s pot.
  • Stir everything together until it reaches a uniform consistency. Don't overfill.
  • Press start! If center is gooey, cook one more cycle or microwave.

Mix-ins:

  • bananas and chocolate sauce
  • sweet beans
  • maple syrup, brown sugar, sweet potato
  • cream cheese, sugar, and lemon juice (for cheesecake fans)
  • potato and okra
  • 1.5T matcha powder, topped with sweet red bean paste (azuki)
Sweet Apple Pancakes

  • 2 apples, cut into wedges
  • 50 grams (1.8 ounces) butter, sliced
  • lemon juice
  • honey
  • 50 milliliters (1.7 ounces) nonfat milk
  • 100 grams (3.5 ounces) pancake mix
  • 1 egg
  • Mix apples, butter, honey, lemon juice in rice cooker.  Adjust mixture for desired sweetness or tartness.
  • Cook for one cycle.
  • Pour drippings into a bowl, mix with milk. Combined liquid should be about 100 ml.
  • Mix in eggs to a froth.
  • Add pancake mix and stir to smooth consistency.
  • Arrange apple wedges into single layer, add batter.
  • Cook for one cycle.
  • Flip and serve top-side-down on plate.
